First, mix the spices below. Boil the noodles, rinse cold and set aside. Saute mushrooms, snow peas, broccoli and shrimp. Then add three teaspoons of the mix and the noodles. Shake well until everything is nice and warm.
Cut the little gem in half, fry on the smooth side just until brown, turn over and sprinkle some of the mix over it. Add the gem to the stir-fry.
The spice mix you made is called Seven Seas and comes out Spice Wise Too, the second part of the books by chef Michel Hanssen, especially for people who are not allowed to use salt (anymore). Whatever you have left, you keep, tightly closed, for another time.
Necessary for two people
Seven Seas mix, all ground:
• 4 tsp coriander seeds
• 3 tsp cardamom
• 2 teas of cumin seeds
• 1 teaspoon chili pepper
• 3 tsp cinnamon powder
• 1 teaspoon of cloves
• ½ teaspoon of fenugreek
• 1 teaspoon star anise
Further:
• 200 grams of egg noodles
• 10 large shrimps
• 100 gr mixed mushrooms
• 30 gr snow peas
• 200 gr broccoli
• 1 tbsp Seven Seas spice mix
• 1 stump little gem
• oil
