It looks like a magic spell and it actually tastes magical! The famous chef Xabier Gutiérrez from San Sebastián (also a psychologist and writer) has a nice recipe for a baguette with that Idiazabal. On his site you will find more delicious dishes, just google his name. If you can’t find this particular cheese at your cheese shop, you can use another smoked cheese.
Roast the aubergine and tomato with a little olive oil, oregano and salt, wrapped in aluminum foil, in a 180 degree oven for 1 hour. Roughly chop the aubergine and tomato and place them on a crispy piece of baguette.
Place a few thin slices of the smoked cheese on top and drizzle with a few drops of extra virgin olive oil. Fold your sandwich and your lunch is ready. But if you wrap it up and eat it an hour later, it might taste even better…

– 1 baguette
– 1 medium tomato
– 70 g Idiazabal or other smoked cheese
– chopped oregano
– extra virgin olive oil
– ¼ eggplant
