Strictly speaking, nothing to be lied to, although fresh vegetables are of course much more useful than a processed product with vegetables in it. A typical case of marketing. We go for a Spanish tortilla, which is tastier anyway and you decide how much vegetables you put in it. Peel the onions and chop them finely.
Fry for five minutes in a frying pan with olive oil, but do not caramelize and set aside. Meanwhile, wash and peel the potatoes. Cut into cubes or slices, however you like. Fry them in another pan in enough olive oil until they are soft without browning or crisping, also set aside and pat dry with kitchen paper.
You can also bake pieces of bell pepper or chorizo in the same way, pat them dry and add them to the tortilla. Take into account an extra egg or use less potato. Beat the eggs in a bowl with some salt and pepper, take a 24 cm pan and heat 1-2 tbsp oil.
Add the potatoes and onions, spread them over the pan, add the eggs. Fry over medium heat until the egg is cooked. Turn the tortilla halfway through with a plate and serve warm. Delicious as a snack or on a baguette.
Needed for 2-3 people:
– 5 large potatoes
– 1 onion, 5 eggs
– olive oil (for frying)
– salt to taste
– black pepper
– Optional: red bell pepper (in pieces) or diced chorizo
